在香港繁忙的中心地区，乳清餐厅像是一个从周围水泥森林中逃脱出来的平静的地方。这间占地336平米餐厅在兼容空间中交织着欧洲和亚洲美食，灵感来自于斯堪纳维亚民间艺术以及土生华人建筑和艺术，并向新加坡的文化景观致敬。在新加坡厨师的带领下，乳清餐厅致力于向食客介绍欧洲美食，并注重当地和应季食材的同时融入新加坡特色。

In the busy central part of Hong Kong, whey restaurants are like a quiet place to escape from the surrounding cement forest. The 336 square meter restaurant is a compatible space with European and Asian cuisine inspired by Scandinavian folk art and native Chinese architecture and art, and pays tribute to the cultural landscape of Singapore. Led by Singapore chefs, whey restaurant is committed to introducing European cuisine to its customers, and focuses on local and seasonal ingredients and the integration of Singapores characteristics.

乳清餐厅参观是根据用餐不同步骤设计，入口前庭指引客人们穿过长长走廊，到达主厨餐桌前建立期待感。线型到达入口与主空间被新加坡艺术家折叠镜装置隔开，这件作品探索时间、空间与自我概念。这件艺术品是对外面繁忙街道的一种放松。开放式场地被柱子清晰隔成四个部分。放式的厨房用餐区，客人直接与厨师互动，它可以俯瞰两个主用餐区，用餐区被隔开作为一个独立的小空间。

The visit of whey restaurant is designed according to different steps of dining. The entrance vestibule guides guests through the long corridor to establish a sense of expectation before the chefs table. The line entry is separated from the main space by Singapore artists folding mirror device, which explores the concept of time, space and self. This art is a relaxation of the busy streets outside. The open site is clearly separated into four parts by columns. The dining area of the kitchen is arranged in which the guests interact directly with the chef. It can overlook two main dining areas, which are separated as an independent small space.

空间的特点是色调的相互作用，从温暖的大地色系到深沉的热带绿色，再加上黄铜细节。让人联想到质朴的斯堪的纳维亚小木屋和热带新加坡丰富的绿色，并带有一丝抛光的精致感。定制木质餐桌和陶瓷餐具系列为空间带来了一片香港的气息。在本地足迹的基础上，这个空间充满由国际艺术家精心策划的艺术品。

The space is characterized by an interplay of tones, from warm earth to deep tropical green, plus brass details. Its reminiscent of the rustic Scandinavian cabin and the rich green of tropical Singapore, with a touch of polished delicacy. Custom made wooden table and ceramic tableware series bring a Hong Kong flavor to the space. Based on local footprint, the space is full of artworks carefully planned by international artists.

乳清餐厅致力于为当地农场和企业提供支持，并提供以当地最新鲜的食材制成的菜单。这家餐厅使用全部食材来减少食物浪费，这也体现在餐厅灯名字上：这是奶酪制造过程中的副产品，乳清被转化为一种重要调味品，否则就会被扔进垃圾桶。

Whey restaurants are committed to supporting local farms and businesses and providing menus made from the freshest local ingredients. The restaurant uses all ingredients to reduce food waste, which is also reflected in the name of the restaurant light: This is a by-product of cheese manufacturing, whey is converted into an important condiment, otherwise it will be thrown into the trash can.

这座历史悠久的堡垒，将被新木结构取代。生态材料、地方工艺和可再生能源构成稳固的前提基础，提供固定休憩场所。作为单体建筑聚合形式，其品质体现在设计逐渐延展增建不同体量，并保留室内设计元素。建筑包围现有堡垒，形成新入口空间，通过顶棚清晰可见。堡垒原始轮廓回到前景，通过房屋立面和木植间清晰比例与几何结构加强花园座区氛围。

This historic fortress will now be replaced by a new wooden structure. Ecological materials, local technology and renewable energy constitute a solid foundation to provide a fixed resting place. As a single building aggregation form, its quality is reflected in the gradual extension of the design, the addition of different volumes, and the retention of interior center design elements. The building surrounds the existing fort to form a new entrance space, which is clearly visible through the ceiling. The original outline of the fortress returns to the foreground, and the garden area atmosphere is enhanced by the clear proportion and geometric structure of the house facade and the wood planting room.

建筑、材料和建筑技术将根据场地的条件特地开发，旨在向游客传递其特殊历史和地理位置的意义。现存结构将进行大规模翻新，采石场石砌体将暴露在外。毗邻这座拥有百年历史的坚固结构，两侧形成精致而明晰木制结构，支撑着覆盖太阳能系统的平缓倾斜的山墙屋顶。

The architecture, materials and construction technology will be specially developed according to the site conditions, aiming to convey the significance of its special history and geographical location to tourists. The existing structure will be renovated on a large scale and the quarry masonry will be exposed. Adjacent to this century old solid structure, delicate and clear wooden structures are formed on both sides, supporting the gently sloping gable roof covering the solar system.

外墙和屋顶采用羊毛作为保温材料，热能由屋顶太阳能系统和退役军用掩体中冰蓄冷装置提供。两幢附楼屋面的大型光伏系统提供年度所需的大部分电量，可持续展示项目从一开始就是客户核心关注点。同样，当地工匠加入也是为了让尽可能多的人参与其中，并使该地区居民能够认同对古老传统的重新诠释。

Wool is used as thermal insulation material for exterior wall and roof, and heat energy is provided by solar energy system on roof and ice storage device in retired military bunker. The large PV systems on the roofs of two annex buildings provide most of the annual electricity demand, and the sustainable display project has been the core concern of customers from the beginning. Similarly, the participation of local craftsmen is to involve as many people as possible, and enable the residents of the area to recognize the reinterpretation of ancient traditions.
